Danny Staples will be whisking up delicious dishes using locally sourced ingredients in the Seawater: Photo Emulsions exhibition space.

Danny Staples will be creating dishes using locally sourced ingredients during the exhibition Seawater : Photo Emulsions; as well as at the evening supper, sitting inside the exhibition space.

Danny currently works for Sessions Market, a multi faceted hospitality company, working with renowned chefs such as Ivan Ramen (Netflix Chefs table and Kenny Tutt, Masterchef Champion) and innovative brand founders to develop and deliver exciting menus across the UK.

Having moved to Folkestone in 2020, and whilst working with local hospitality businesses, Danny has seen Folkestone’s food scene expand, and is excited to participate creatively at The Salt + Earth Festival.

Rare breed pork & pea glass terrine, caramelised apple butter, pickled greens

20 Mile monkfish, clams, pickled sea vegetables, cafe de Paris butter, curry tempura samphire

Poached cherry Eton mess, mascarpone, broken meringue, cherry sabayon, lemon balm
